Could anyone tell me why I would have high levels of Iodine if I weren't adding any into the tank?

First of all, test kits available to the hobby for testing iodine or its forms, are notoriously inaccurate.
Unless you have a certain kind of gorgonian, you don't need to add iodine or it's forms, according to Randy Holmes-Farley, the best source of all that's good in reefing chemistry.
As for adding iodine or it's forms, every time you feed something in your tank you are adding iodine in one form or another.
While there may be a food out there that doesn't contain iodine, I don't know what it is as almost all foods will have some in them.
