How about Southern Mexican?
Two cups yellow corn meal
One cup self rising flour
Half to one cup sugar (ok you don't have to)
One stick of butter
Two eggs
1/2 cup oil
Enough milk to make it a little more runny than toothpaste. You can use buttermilk.
Add a can of Mexi-corn and whatever else you want.
Preheat oven to 425-450
Put cast iron skillet in over with stick of butter just until butter melts. Pour 1/2 of the butter in the mix and stir it in too.
Pour mix in skillet and cook.
Eat and run for heart pump!
