Easy and tasty fish


I love fish so...


1) This will feed two and I use Pampered Chef small stone baking dishes.

Orange roughy or tilapia works well. Pour in and spread thin about a half a can of diced italian seasoned tomatoes in the bottom of the dish. Rinse, dry, and lightly coat the fish in extra virgin olive oil then lightly cover them with Cavender's Greek Seasoning. Place the fish in the dish on top of the tomatoes. Use the remaining tomatoes to cover the fish (usually takes a full can to cover the fish) then cover the dish with foil. Bake on 325 for about 30 minutes.

MUST be served with merlot or shiraz.

2)Fish tacos...yes it is good

Sauce: Red/black seedless grapes saute`d in butter and about a half cup of chardonnay until they are very soft.

Fish: Again tilapia or orange roughy...Rinse, dry, and lightly cover with mayonnaise. Lightly cover with Chef Prudhome's Seafood Magic. Broil on medium and on a greased rack until the edges of the fish are crispy, flip and broil a few minutes more.

Make the tacos with the fish, spinach leaves, mild cheddar, and the sauce.

...again, MUST be served with merlot or shiraz...
