2 heads garlic
1 jalapeno
1 habanero
1 yellow chile
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
1/2 chopped white onion
1/2 chopped red onion
4 or 5 chopped challots
kidney beans
black beans
white beans
celery seed
course ground pepper
chile powder
paprika
cumin
more cumin
ground sirloin ( chile grind )
Amounts are up to you ( I never make it the same ) But the bell peppers should be lightly sauted and set aside, onions should also be sauted and set aside (seperately) as should the remaining peppers. One head of garlic goes in early and the last goes in with the onions and peppers.
The beans meat and seasoning should be simmered most of the day and the onions and peppers should be added about 2 hours before serving and finished on low heat. Top with extra sharp chedder and listen to the sound of coagulation of the arteries!
