Tom's Jalapeno Corn Bread


Ingredients

1 1/2 Cups Yellow Cornmeal
1 Tsp Baking Soda
1/2 Cup All-Purpose Flour
1 Tsp Salt
4 Jalapeno Peppers, Seeded and chopped
1 1/2 Cups Buttermilk
2 Eggs; Beaten
3 Tbls Butter; Melted
2 Tbls Sugar
2 Tsp Baking Powder
2 ears fresh corn, kernels cut off cobb
1 cup grated cheddar (sharp cheese)
1/2 cup butter roasted pecans, coarse chopped


Instructions

Preheat the oven to 425 degrees.
Butter the (8" square) baking pan.
Mix the first 7 ingredients together in a large bowl.
Mix the buttermilk, eggs and butter together in a small bowl.
Add the liquid ingredients to the dry ingredients and stir until just
mixed, then stir in corn kernels, 1/2 of the cheese and all the pecan pieces
Pour the batter into the prepared pan.
Bake until firm to the touch (about 30 minutes).
Top individual servings with remaining grated cheese.


Serve with a good red chili salsa or bacon chili potatoes.
