Well halfway there...going to try this out in the morning

Corn Pone

(This recipe yields 4 servings) Printable Version

  • 3 cups cornmeal
  • 3 teaspoons salt
  • 2-3 cups water
  • 3 tablespoons lard

If you broke it, lost it, need it cheap or just can''t find it anywhere else, find it at eBay!

Bring water to a boil in a medium sauce pan. Add cornmeal and salt and immediately remove from stove. Mix well.

Melt half of lard in a baking pan to coat. Stir remaining lard into corn meal mixture. Pour mixture into baking pan.

Bake at 350 degrees for about 50 minutes, or until golden brown.

The crust on this stuff is just amazing if this is the correct recipe. The right way to do this is in a cast iron skillet, but what do I know. Also, the hick way to have it is in patties...about seven fit in the skillet with one in the center and the rest around it. Melt butter all over it and flip a certain signal with a certain finger to the artery police just this once.

Now...somebody has to know how to make a fritter. Sheesh!!!!
