Oh yeah the recipe:

Get a couple of pounds of skirt steak and beat the heck out of it with the spiky side of your meat tenderizer mallet.

In your blender dump in:
1/2 cup olive oil
1/3 cup soy sauce (takes the place of salt as well)
6 green onions or scallions
2 to 6 cloves of garlic based on..well if you like garlic
1/4 cup lime juice from real limes, not the green plastic ones
2 teaspoons red pepper, dial it back if you are in the Midwest
1/2 teaspoon dried cumin, or a bunch of fresh cilantro if available
3 tablespoons dark brown sugar
some cracked black pepper

Mix it up in the blender already. If you are using fresh Cilantro tear it and dump it in after blending the rest.

The skirt steaks are so thin that this marinates in a gallon freezer bag in an hour in the fridge. Fold it so that all the extra air is out of the baggie before doing the ziplock thang.

This will cook in a couple of minutes per side on high heat with the grill surface preheated. Put a little peanut or canola oil on the grill with a brush to prevent sticking. Let it sit a couple of minutes in foil then cut against the grain and you will not believe how this lowly cut of meat is just incredible. We do either tortillas with sour cream and guac or eat it as cooked with corn and potatoes.
