Nothing wrong with batter frying (remember flour first, then the egg, then some dixie fry and it will stick) but try just baking it with lemons and herbs inside. A very little bit of rosemary, parsley flakes, sage and thyme work well....just remember the Simon and Garfunkel song.
Poaching fish is a great way to prepare it as well and you can use something like that cajun seasoning in the cardboard can or some other sort of season all lightly when it comes out.
If you really get motivated stuff them with bell peppers and onions, lemon slices, and some butter, put a little dab of soy sauce and another of worchestire in the middle along with crushed garlic...wrap in foil and bake or grill for 10 minutes per inch of thickness at 350.
One of these days I will bug you folks in the Midwest on how to get my ribs to just fall off the bone.
