if a pump has 3/4" outlets, does that mean you use 3/4" pipe or would you use 1" pipe?

they generally mean 3/4" npt fittings or 3/4" threaded pipe fittings. most outlets are male and inlets are female.

Use at least the same size, going smaller will reduce flow and increase back pressure, while going larger will reduce percieved velocity coming out of the pipe end
