when to harvest chaeto?
Mine is now occupying my entire fuge... started off with a tiny baggie full... I have given some to 2 new reefers here in my area already too...it grew back fast and big! When should one harvest this stuff?? When you see your nitrates rising or just when it takes over the fuge??? Or just let it grow forever?

Just set a certain size you want as it's maximum and trim it back to that once a week

But don't you have to harvest it at some point to keep nitrates down? I mean, isn't it's whole purpose to keep nutrients down? so, if you never "harvest" those nutrients how does it keep them down?

trim it whenever you want. Chaeto does not holocarpy on you so the risk of getting growing so much is not that bad. as it gets bigger and bigger it will release more and more growth inhibitors in the water, so you may start seeing a slowdown in coral growth as the ball gets bigger.
algae is not that great at nitrate removal. the sand bed is what people associate with nitrate removal. you do need to harvest something in order to export something.

I had an argument recently with someone who supposedly has been in the hobby for sometime. He insisted that you do NOT have to harvest the macro to rid the nitrates. He insisted the macro processed the nitrates into something else. How valid is this? Do they process the nitrates the same way in which humans process oxygen into c02?

as far as i know algae does not process the nitrates into nitrogen in any real amount. besides i believe the algae uses the nitrogen for building tissue, not for off gassing. LR on the other hand does process nitrates to nitrogen. algae can uptake some phosphates from the water column, but unless the algae is removed any uptaken phosphates are still in the system.
