WHat happens if it goes too high/low?
If my salinity gets too high, what do i do?
and
If it gets too low, what do i do?

you're salinity will go up. as water evaporates from the tank, the salt stay's in the tank, thus rising teh salt level's in the water. So you will need to keep some RODI (I buy gallon distilled) to top-off your tank each day to make up for evaporation.
Purchasing a refractometer will tell you how hi the salinity is.
As far as it being to low, as long as you make sure the sailinity is right in the water you do water changes in is right, you won't have an issue with it being to low.

but if you are low you can add small amounts of salt water to the tank until it gets where it needs to be.

And as the water evaporats you need to add just water to bring the salinity back down.

The only way that the salinity can drop is from skimming wet and topping off with plain RO/DI water. If this happens just make your next batch of water(for your next water change) a bit higher than normal. My salinity usually drops to 1.025 and I make water at approx 1.027-1.028 to bring the main tank back to 1.026. After a while, you'll be able to do this with your eyes closed
