tank clean up questions

OK-I read all the archives, and I have a little money to spend on some live sand and maybe a few cleaners...but wait...can I have shrimp, snails etc. with my polka dot grouper?
I am adding live sand and eventually live rock to help with my nitrate/ slime problem. ( I feed very little and change water often) but I know that inverts dont do well under those conditions... should I wait to add the shrimp/ snails until parameters are better? (ph 8.2/ Nitrites less than .1/ nitrates less than 10/ alk 2.2-3.2)

What about the sand, anyways? Do I have to cure it or quarantine it? (MarineDepotLive) I have about 2-3 inches of crushed coral, (grain size from 1/32nd to 1/8th) I am planning on gently adding about 50 lbs to the top on one side. (i'll add 50 more later) I have to leave the fish in there, so i will be extremely cautious and slow. Mix it in? Yes or no.
Suggestions? I know you (the collective "you") have been asked this stuff a million times. Thanks again.

Snails and crabs may be iffy, shrimp I think would be expensive snacks with a polkadot grouper, sorry. An alternative would be a large sump with DSB and cleanup crew there, just a thought
