The self tapping is easy if you need to do it. You will need to shut a valve though in the copper pipe before you install it to put in a valve onto the fitting. Do you have a refrigerator icemaker line you can tee off of though or a washer in your apartment. Both of them are easy options that won't leave a hole in your plumbing. Also, you can tee before the kitchen sink if it is a flex line and not copper pipe that is sweated in.
Let us know what you have and there are a lot of plumbers on TRT that don't even learn how to do it by shooting water all over like I did.
