Clove polyps don't need a mouth to live they can be cut up and each piece will grow. Even the little pieces left on the rock will grow if light is available. Don't worry about cutting them. If they die it would be from improper acclimation or a bacterial/fungal infection.

Mine arent the white or green xenia looking ones, mine are brown with green in the center, i think their other name is glove polyps. Same story as clove polyps?

This is a very confusing rock, it has clove polyps on it and also clove polyps.. haha heres a picture
This is what it used to look like.. before the crabs, cyano, hair algae and all that... Slowly making a comeback. Theres also the white clove polyps on this rock too.
