why do you want to replace the rock?
best way imo would be either set up another tank, get everything stable, and transfer everything to it while you do the work and let the new rock cycle out, or cycle the rock in a rubber maid, then put all the fish and coral in a rubbermaid as you tear your tank apart and rebuild, the first one is probably the safest way.
