So....would a single 96W retro kit from ahsupply be enough light for say a collection of xenia, mushrooms & bubble? Or would a double be necessary for a 30 gallon tank?

It would be enough for the Xenia and mushrooms, but are you talking about a bubble coral (Physogyra sp.) or a bubble anemone (Entacmaea quadricolor)??? It would be ok for the coral, but not the anemone IMHO. HTH

That is good news. So 3.2 watts per gallon would work for those corals, I think the anemone is going to stay put in that 5 gallon, for the price of corals, I don't want to take any chances!
