Lou,
A big established tank increases the chances that he's actually snacking on the sly.

A week is long, but I've had the larger surgeonfishes go snobbish for up to two. It's probably just adjusting to the new environs.

What are you trying to feed it?

Lou,
My Naso didn't recognize the sheets of dried seaweed as food. It took a little while for him to get the idea, in the mean time if you have to get him to eat, soak some frozen brine shrimp in selcon and feed that, I've yet so see a fish not go berserk for brine shrimp . Excepting of course Mandarins, etc. that only eat live foods.

A trick to get him to eat, loosely roll up the sheet of Nori and rubberband it in the middle, so that it is up and waving in the current. Looks more like an actual plant that way. My Naso didn't really eat the nori until my Lawnmower blenny accidentally munched on the roll. Lit him up like a buzzer, then he tore into it like he was starving. Of course, the Naso had to come see what the fuss was all about, and sample the goodies. Now I can't get it to the bottom of the tank fast enough, the Naso is tearing at it on the way down .

My Naso won't touch flake food, period.
