corals are just houses for various different symbiots. some are zoax and others are bacteria. the differences in populations of these symbiots determin the colouring of the coral. some species seem to prefer certian symbiots, but most just like to house the ones that do best in the environment they are located in. certain zoax/bacteria prefer certain light spectrums, nutrient levels, temperature, etc.
zoas, and shrooms are usually less likely to colour change, but can/will if conditions warrant it.
