I've noticed some aptasia on my liverock...

Not that much...maybe like 5 or 6 of them. It did start out as just one and I was dumb and ignored it. I've heard that I should buy peppermint shrimp and they'll take care of it, but what else will the shrimp eat. I think the shrimp could get rid of it relatively quickly, but I'm worried about keeping the shrimp satisfied after the aptasia are gone. Furthermore, will the shrimp get along okay with hermits, an emerald crab, and a fiji damsel?

if you only have a few then use joes juice, lemon juice, or kalk past to eliminate them fast. then you don't need the shrimp.
