You're right, both treatments you mention have pluses and minuses...copper is toxic to all living things...even if it is not a lethal levels for the fish, IMO it is less than ideal to subject fish to any level...the one thing about either treatment being really effective is to maintain the right levels...too much or too little copper can be a problem...you really need a copper test kit to properly dose copper treatments...by the same token you need a calibrated refractometer to maintain hypo...trying to use a hydrometer you could easily be off a few points which will make the treatment less than effective.
Personally I never subject my fish to copper, but that's just my choice...as for removing copper it can be removed with poly pads or products like Pura which have exchange resins that absorb metals...I can vouch for the Pura first hand...I used it to remove copper from a tank that accidentally got some copper in it...the live rock from that tank is still in my system today and I see no ill effects from it.
