Blackened Grilled Grouper Sandwich

Ingredients
8 lettuce leaves
1 medium tomato
1 1/4 pounds grouper, thawed
cooking spray
2 tablespoons blackened fish seasoning blend
4 Bakery Kaiser rolls
4 tablespoons tartar sauce


Steps
1. Preheat 2-sided tabletop grill.
2. Wash lettuce leaves and tomato. Slice tomato.
3. Rinse fish under cold running water. Check for bones by pressing on fish with fingertips. Cut into 4 servings.
4. Spray one side of fish with cooking spray. Sprinkle with half of seasoning blend. Place on grill, seasoned side down.
5. Spray and season second side of fish. Close lid and cook 5 minutes, or until internal temperature reaches 145°F. (If using regular grill, double cooking time, turning once.)
6. Slice rolls, if needed. Spread tarter sauce on one half of each roll. Top with lettuce, then tomato.
7. Place fish on sandwich, top with additional lettuce and remaining half of roll. (Assembling with lettuce next to the roll helps to prevent soggy bread.) Serve.

ueen will always be bigger. I would not worry about it. Queens are one of the more aggresive fish to put in a tank. If I remember correctly Jeffie said "With colors like that on a reef you need to be agressive because you really stick out" or something like that

I wish I could take some video of the two of them. The Queen knows how to deal with big fish.
