That is almost completely up to you, as moonlights are (IMHO!) just aesthetic. Blues will give you a more "natural" look, while red will allow you to view without actually bothering everything; whites can be overpowering but are also good in combination with blues.

Personally, I just finished building an array that has Ultra Violet at 390-400nm, Blue at 460-470nm, and Green at 515-530nm LEDs. There are 16 total, 6:6:4 respectively. I do not have a shot with them on the tank yet. Then again, I am an engineering student with all together too much time on my hands and access to cheap electronics.

the moon is just a mirror. the spectrum of moonlight is the same as that of the sun. so, if you were to do a true moonlight representation than around a 5K temp would be perfect.

in the real world this would be annoying to the aquarist, as it "seems" wrong because in order for the light to be dimm enough to be accurate, you could not see anything.

i would say use red. at least that way the silly moonlight will not be acting like a nite lite keeping your critters up all night that have eyes sensitive to the blue spectrum, which you do not have. a blue light is a lot brighter to the critters in your tank than it is to you.
