Besides acne and a pulse?

Probably reliability and a willingness to learn. Someone who isn't afraid to get a little detritus under their nails.

I have never owned an LFS, so I can't speak to LFS specifics. What I always looked for in an employee was honesty above all else. "Sir, I want to learn and willing to work hard to do it" meant a lot more to me, as an employer, than did "I have 35 years experience and you can't go wrong with me".

You can talk to the LFS before hand and tell them what you want to know. Then you can know before hand what to expect. Have him do the talking but it will help you prepare him for it.

The guy I work for looks for someone who is willing to do the nasty stuff as well as the fun stuff too. cleaning socks, skimmers, doing waterchanges, all of the stuff we don't wanna do. Also someone who wants to learn and inform others about the whole store, not just the reefing stuff.

let me see

someone willing to work for peanuts
someone that shows up on time and doesn't steal from them

and it helps to have a working knowledge of the hobby

be prepared to become enlightened on the buisness side of the process
including high mortality rates

foh and fum???

i would think the normal stuff like a history of showing up on time for work and no attendnce issues; not having been canned for stealing, disrespect, customer issues, etc.; good positive attitude;more "us" , less "me";and it doesn't hurt to have some knowledge base of the subject at hand. I find that when interviewing prospective employees, that it is good to let them(prospective employeese) just talk, maybe to guide the cnversation only if the discussion gets wy off track, so you might wnt to get him one of those interview books that gives you hints about what to and NOT to talk about in an interview. If the inverviewer stops talking, they're waiting for the interviewee to fill the gap, so it's good for the interviewee to be prepared with the right stuff for those gaps...
