Try this chili!
Wheee! You all should try this. I made it today for a Super Bowl party. It's even Tom tested
1 small onion
1 carrot
1 stalk of celery
2 cans of black beans
1 can of pinto beans
1 can of salsa verde
1 can of diced tomatoes
1 jar of marinated artichoke hearts
1/2 salsa (I hate to admit it, but I used mild)
dash of cinnamon
3/4 cup wine (I used white, but merlot is good too)
3 TBS olive oil
Chop the onion, carrot and celery and saute in the olive oil. When the veggies are partially cooked, pour in the wine and scrape up the good stuff stuck to the bottom of the pot, cooking until it is reduced. Add some of the oil from the jar of artichokes. Add the diced tomatoes and black beans (do not drain the can). Puree the pinto beans in a food processor and add to the cooking chili. Add the artichoke hearts and salsa. Dash in cinnamon.
Of course, you meat eaters might want to throw in some elk, chicken, rattlesnake, .....but I leave that mess out
It's also good served over rice, or rice added to the chili.

Yumm...
for me...
2-3lb hamburger
1/2 onion (diced)
3 cans chili beans in chili sauce (I use hot)
3 cans red beans (I drain them)
2 cans rotel diced tomatoes and green chili's (I use hot)
2 cans delmonte stewed tomatoes mexican style (I chop the tomatoes up)
1-2 cans Delmonte diced tomatoes chili style
chili powder
Brown meat and onion and put in crock pot, add all the rest. Let it cook for half an hour..taste...and add chili seasoning to taste. This chili has earned me TONS of compliments. And a few friends who have tried it, sweat like they got out of the shower since I make it so hot. muhahahahaha

do you drink the wine before hand to forget that there is no meat?
nice recipe cath...
i did not know they made a mild salsa
but mine is very close to what jermey make ..except o use one or two schotch bonets or one nice habinaro.... i srinkle a little chesse on top right before i eat it.

Tims...what you should do is get a bottle of Da Bomb... just 2-3 drops of that, will make the whole batch NICE and hot. MUHAHAHAHAHA

I had Cath's and although I like Italian sausage or hamburger, chicken, etc in mine, I have to say that her's was good enough to eat WITHOUT the meat!!!

Mezcal-Rattlesnake Chili
2 bottles Mezcal
a bunch of beans,tomato sauce,onion,garlic, peppers to taste
put in crock pot, slow cook
Drink one bottle mezcal
go hunt a large ornery rattler,diamond back preferred
drink second bottle mezcal while waiting paramedics cause you got snake bit
the chili can be served at the wake

Or maybe all this time I've been eating chicken, it wasn't really chicken.
