OK, gang....it's time for the annual holiday food thread
What's for Thanksgiving dinner and beyond...
I'll get it started with my traditional Mama Stamberg's Frozen Cranberry surprise...it's a regular on NPR  Recipe to follow...I just wanted to get the thread started

Pretty much the standard fare at Mom n Dad's,,,,
Turkey,stuffin',cranberry sauce, smashed taters,homemade bread,veggies etc. etc.and on n' on,,,,and plenty good n plenty of it!
Still full from b-fast today, so i'm not in hi gear for food right now,,,,lol

Kevin-- I think a perfect addition would be Mama Stamberg's Frozen Cranberry relish. The surprising touch is onions and horshradish! Trust me...it's great!

Hrmm...try searing all the stuff that comes in the turkey and scraping the pan (yep you cannot cook your bird with that stuff in there). A can of cream of celery gravy and the scrapings along with some cut up green onions and corn starch if you need to thicken things and you are all set to dump in the pan drippings for perfect gravy.
Also, my turkey has about 20 punctures in it which you do after rubbing a boatload of garlic butter under the skin. In each one stick a clove of garlic and a green onion. Stick the bird in a bag with a bunch of onions and celery and soy and worcestire and stuff then cook it it one of those plastic bags. Don't rely on the thermometer pop ups as they are calibrated to go off at about 170-175 and you stop cooking when the internal temp is 160. This turkey will explode in your face (hey now this is a family site so no comments on the recipe).
Oh yeah...bake, don't boil your potatoes to mash. Add garlic and butter and herbs with half and half then mash away.

Thanks giving is great but I cook the Christmas meal. Already ordered a12lb prime rib. That hurt. But it will be good! Turkey day is the standard and lots of it. I have to start making room for now!

Since my son will not be with me on thanksgiving this year i did a full early thanksgiving about a week ago. a nice 18 lbs bird, some stuffing inside, not much and some on the stove, i like to mix in a bit of crab adn shrimp to the stufing. it adds a reall nice taste. did up 12 ears of corn and fresh greenbeans..
gravey was the best. i added crab to it and just a bit of pepper and salt . the kids almost drink it instead ofusing it for everythng else!
sounds weird but man i does taste very good.

No fried turkey tomorrow. We can't seem to find any that are small enough to fit in the frier, so maybe in a few weeks. Stacey brought a 20+ lb bird home yesterday, so it looks like I'll be breaking in the new roasting pan and rack. She got one of those turkey injectors, so I'm thinking an herb/butter mixture injected into the breast.

OK...since you all begged, I'll post the recipe for the frozen cranberry relish. Yes, it's a legendary NPR thing, but deal with it  It's great!
Mama Stamberg's Cranberry Relish Recipe
2 cups raw cranberries
1 small onion
1/2 cup sugar
3/4 cup sour cream
2 tablespoons horseradish
Grind the cranberries and onion together. Add remaining ingredients and mix. Put in a plastic container and freeze. An hour before serving, move the container from the freezer to the refrigerator compartment to thaw. The relish will be thick, creamy, and shocking pink.
Makes 1 1/2 pints.
