I need a recipe please:-)
...For Mexican cornbread. I like the kind the has whole kernels of corn and bits of tomatos and jalapenos. Give me a recipe and I'll invite you over to share some.

Rick, I thought I had one handy but couldn't find it. I did a google search though on Mexican corn bread and came up with about a gazllion hits...some of those look pretty tasty!

How about Southern Mexican? 
Two cups yellow corn meal
One cup self rising flour
Half to one cup sugar (ok you don't have to)
One stick of butter
Two eggs
1/2 cup oil
Enough milk to make it a little more runny than toothpaste. You can use buttermilk.
Add a can of Mexi-corn and whatever else you want.
Preheat oven to 425-450
Put cast iron skillet in over with stick of butter just until butter melts. Pour 1/2 of the butter in the mix and stir it in too.
Pour mix in skillet and cook.
Eat and run for heart pump!

Hey, another good variation on that recipe is to add a pound of cooked ground beef to it and some chopped green chile and grated cheddar or monteray jack cheese. Oh, and forget the sugar! |
