Sea in the City is an awesome shop - they are the place to go for aquacultured zoas, rics, and rare SPS.
Discovery Cove is very cool. 'Nuff said.
If you're a diver, why stop there when you can dive "The Living Seas!" It's a little pricy for a 40 minute dive, but very cool.

I like to take visitors to Gatorland (
http://www.gatorland.com/) It's cheesy, but it's fun. And you can feed the gators all you want, unlike most places. They sell hot dogs at the park. Good for a half-day or so.

Out in Tampa/Clearwater, the Florida Aquarium has a nice display of Woody and Leafy Seadragons.

If there's a possibility you'd be headed to the East Coast, hit "Simply Delicious" in Cocoa Beach for lunch - a tiny little cafe and bakery for fresh desserts for the beach. (They also make a to-die-for grouper sandwich)
While you're in Cocoa, enjoy the beach, ("Coconuts on the Beach"
