Favorite Recipe thread


OK Gang you know what this means!

Graham cracker crust (ready made) large size

1 1/2 cans sweetened condensed milk
1 package Philadelphia cream cheese
1/4 c real lemon

I like to add canned drained peaches and pecans or walnuts.

But we've tried frozen strawberries (great!), canned blue berries (great!).

string bean casserole (the easy kind, i've seen WAY too many people complicate this)

2-3 cans of string beans (not the french-cut)
1-2 cans of cream of mushroom soup
1 large can of french's fried onions

stir beans/soup together in a baking dish. cover with onions. bake till brown on top/warm inside

CHOW DOWN BAYBEE!!!!!!!!!!
(what i wouldn't DO for some groceries in my house right now...)

OK heres my favorite Seoul Food recipe
2-3 # of roast, sliced really thin like for teriyaki
1 cup brown sugar
1/4 cup oil( sesame or whatever)
tablespoon cup rice vinegar
1 cup chopped green onion
A lot of Soyu
garlic and ginger to taste
mix all but meat and marinade meat at least 4 hrs, overnite is OK
BBQ, serve with rice and KimChee, and sliced Ginger

Strawberry-Rhubarb Upside-Down cake


My Grandma Alice used to make this often for our family; it was my Grandpa's favorite. The year she passed away, I made this recipe for the county fair and won a blue ribbon. I framed the ribbon with a picture of my Grandma and gave it to my Grandpa. He said it was the best present I ever gave to him.

5 cups rhubarb cut in small pieces. Cover with hot water for a few minutes, drain water and then squeeze the excess water out with paper towels or a clean dish towel. The more water you can get out, the better.

Mix rhubarb with:

1 cup sugar
1 small package strawberry jello
1 cup miniature marshmallows

place this mixture in a 9"x13" pan, greased and lightly floured

Cover with 1 package yellow cake mix, prepared to package directions (I've found that the super-moist or pudding cake mixes don't work best with this...too moist.)

Bake @ 350 degrees F for 40 minutes, let the cake cool for a few minutes in the pan and then loosen the edges with a knife or spatula and invert onto a cookie sheet or large flat platter. If the cake sticks, bang on the bottom of the pan with a wooden spoon.

Great thread! And good ones to start this thread. Ann-Marie...that green bean casserole is a fave all the way around.
Doug, I'm thinking I can make a few adjustments to make it a veggie dish
And Alice..what a wonderful gift for you to give your Grandpa!

Here's my entry
Lemon Ice Cream Pie

1 pint vanilla ice cream
3 1/2 cups of Cool Whip
6 oz can of frozen lemonaide concentrate
large graham cracker crust

Soften ice cream, cool whip, and lemonaide. Stir or fold together with a whip. Pour into crust and freeze at least 4 hours. Take out of freezer 10 minutes before serving.

Today I'm going to drizzle thinned out raspberry jam on top and sliced bananas to garnish.

Jerk Fish with Crisp.

2 tablespoon soy sauce
1 tablespoon ground thyme
6-8 garlic cloves
1/2 cup ground allspice berries
1/2-1 cup packed brown sugar
4-6 Scotch bonnets
2 bunches scallions
1 teaspoon cinnamon
1-4 habanero or jalapeno peppers ('pends on how hot you like it)
1/2 teaspoon nutmeg
dash of salt and pepper


Blend all these ingredients until pureed/smooth. Rub into red or black grouper fillets. Put the filets in the rest of the sauce and marinate overnite. Fry uncut strips of bacon. Wrap bacon around the filet, attaching it with toothpicks. Grill slowly until the fish is done through, and has a pinkish/tan color on the outside. Remove the toothpicks and put a slice of Provolone cheese on the fillet and serve on/in hard-dough bread. Serve with kiwi fruit, watermelon, and preferrably plantains.

Cath, that marinade doesn't work well with TOFU, my fave tofu is breaded, and deep fried.
Bite off one end of the piece and squeeze out the tofu, then eat the breading

Jerel what you said only I use "wild huckleberries" and it is awesome!

New York Steak and Pepper recipe!

1-2lbs of lean meat sliced thin and sautee with 2 tbls of butter or margarine with some garlic. Set aside.

2. Sautee a whole onion(medium and cut up) and a medium green and red or green and yellow or all three for color as well.

3. Add meat back to onion and peppers and add a small jar of pimentos and cook with 1/2 cup of cooking wine. As you do this have spaghetti(what ever amount you want) boiling and when done add the meat and onions/peppers to the spaghetti and mix well and serve with parmesan cheese! So good!!

Salt and pepper to taste!!

Anne-Marie I have a confession to make - We have that at least once a month, I love it.

Doug, Alice, Cath - I'm printing all those. As soon as I get the ingredients together, we having them!

Johnny, that sounds out of this world. I've got the ingredients in the frig and we're having that this week. Can't wait! Hi Pat :wavy:

Chis, I've been looking for a new fish recipe too! Yours sounds fantastic - doing it too! I've got one similar for mango chutney fish, I'll find it and post.

Here's one for those that like curry.

boneless skinless chicken breasts in bottom of casserole (set aside)

In large blow mix -

2 cans cream of mushroom
1-2 pealed, cored and cut into chunks baking apples
1 whole sweet onion chunked
1 handful (to taste) raisins
1-2 tbs curry (to taste)
white pepper (or not)

Pour mix over chicken and bake in 350 oven until bubbling all the way through. Serve over rice!

and we haven't started on Cuban recipes yet!

Ham and Noodle Casserole


This is my favorite way to use left over ham or roast.

In a medium saucepan, melt 4 TBS butter and sautee one small chopped onion until transparent and soft. Mix together 2 lightly beaten eggs, 1 cup sour cream and the butter/onion mixture. Add 1/2 to 1 cup grated cheese (I mix swiss and cheddar) and 1 to 2 cups cut up ham or beef.

You can put this mixture over 4 cups of dry egg noodles, cooked to package directions, but I make home-made noodles:

Beat together 3 eggs yolks and 1 whole egg until lemon colored, add a pinch or two of salt and about 3-4 TBS of water. Add two cups of flour and mix with your hands to make a stiff dough. Divide into three parts, cover and let the dough rest for 5 minutes. Lightly flour a cutting board and roll out on of the dough balls until very thin. Cover and let the dough rest again. Roll out the other two pieces. Lightly flour the flat pieces and then roll them up like jellyrolls. Slice the rolls into strips 1/4-1/2" wide, (this is the part my kids like to help with ) then unroll the strips and hang over clean broomstiks, dowels or chairbacks to dry. Dry them for about 12 minutes or so. (You only need 1/2 of the noodles for the recipe, the other half will freeze great in a plastic bag.)

Drop the noodles in a large pot of boiling water and cook for about 8 minutes; drain and put them in a 2 QT casserole dish and then pour the ham/beef and cheese mixture over the top, mix together and bake in a 350 oven for 45 minutes.

That reminds me of an easy hot dip.


8 oz of extra sharp cheddar
8 oz of cream cheese
bacon bits (I use Bacos)
Tabasco sauce to taste (wheeee)

Heat it all in a double boiler and serve in a chafing dish


OK, Jerel...now that we've planned the menu for a dinner for you, when should we come down there to help you eat it?

I just tried this tonight for the first time. It's sort of Alice's bean casserole made with what we had so I didn't have to go to the store.

2 cans black beans
1 can light kidney
1 can dark kidney
1 can stewed tomatoes

Cut kielbasa into slices and brown in a little oil, add chopped up onion and bell pepper.
Open cans of stuff and dump in.
Bring to a boil, simmer for a while, and eat.
You can add chili seasoning if you want too.

I tried out a new sweet potato recipe (from Craig Claiborne's Southern Cooking) at Thanksgiving that got rave reviews.

Peel and boil sweet potatoes until done. Drain and put through a food mill or potato ricer (actually you could just mash them).
Add brown sugar, rum, butter and peeled, chopped segements of oranges or mandrin oranges ( I uses clementines). Slap it into a casserole dish, top with a thin layer of oranges and mixed brown sugar, butter and, since I'm in Oregon instead of below the Mason Dixon Line, chopped filberts (hazelnuts for you non-Oregonians). The original recipe used pecans, of course. Bake until it's a little brown on top.
