Easy and tasty fish
I love fish so...
1) This will feed two and I use Pampered Chef small stone baking dishes.
Orange roughy or tilapia works well. Pour in and spread thin about a half a can of diced italian seasoned tomatoes in the bottom of the dish. Rinse, dry, and lightly coat the fish in extra virgin olive oil then lightly cover them with Cavender's Greek Seasoning. Place the fish in the dish on top of the tomatoes. Use the remaining tomatoes to cover the fish (usually takes a full can to cover the fish) then cover the dish with foil. Bake on 325 for about 30 minutes.
MUST be served with merlot or shiraz.
2)Fish tacos...yes it is good
Sauce: Red/black seedless grapes saute`d in butter and about a half cup of chardonnay until they are very soft.
Fish: Again tilapia or orange roughy...Rinse, dry, and lightly cover with mayonnaise. Lightly cover with Chef Prudhome's Seafood Magic. Broil on medium and on a greased rack until the edges of the fish are crispy, flip and broil a few minutes more.
Make the tacos with the fish, spinach leaves, mild cheddar, and the sauce.
...again, MUST be served with merlot or shiraz...

I know, I know. Had a belly full of sushi last night. My grandmother used to say that the best way to cook fish was to put it on a plate and walk it through a warm kitchen.

Tom, glad to know you were able to stay awake for the drive back! I can't wait to read the paper to see how they are able to extract flourescing proteins then infect another coral with them...The corals manufacture the proteins so I have yet been able to rationalize how they trick the infected coral's ribosomes into changing their RNA sequences...or maybe the symbiont manufactures the protein for the coral, if so, they are either tricking the symbiont or simply infecting the coral with a new symbiont...this ought to be good...anyway, I guess that belongs in another thread  Right now, here's the finishing touch for the fish meal.
1 can crescent roll dough
1/2 cup sugar
1 tsp of cinnamon
1 cup of Mt. Dew or equivalent
1 Granny Smith, or equivalent apple
Unroll the dough (it will be in 8 pre cut triangles). Slice the apple into 8 wedges and roll each wedge up in a dough triangle. To make the mix - in a sauce pan over med/low heat, mix the mt. dew, sugar, and cinnamon until all is dissolved. Place the 8 wedges rolled in dough in a baking dish, then pour the mix over the top of the wedges. Bake on 325 for about 35 min.

Local Atlanta folks,
There's a great place on Memorial Drive across from the old Oakland Cemetary. It's called Six Feet Under. They serve mainly cajun and the oysters are some of the best in town. Let me know if you guys want to go out there sometime. The draft beer selection is pretty decent as well.
