My rule fo thumb is 1 hermit per gallon and 1 snail per 2 gal. Mix the types of hermits (blue leg and red) and snails (astrea, cerith, mex turbo, assarius if you have DSB). Im sure others who have a 180 will chime in and narrow it down...

Just remember, the smaller the better. They will clean out the little crevaces and cracks in the rock to help them fliter better. And they will grow, so buy them small and young...

I wouldnt worry about the crabs and snails much as long as the trigger is fed well and not very young. Although I am not very familiar with triggers so someone elase will have chime in for that. As far as more shells, yes its always a good idea to have more shells for them to take over, but for the most part, they stay the same size or grow slowly.. And dont worry about being new, this forum will help you out very quickly as it did me.
